Spice up your Summer Greens with our Blueberry Vinaigrette

To make the dressing, combine blueberries, water, vinegar, and salt in food processor.

Blend for about 1 minute until berries are pureed; scrape sides as necessary.  Add shallot, olive oil, and basil, and pulse until well combined.

Ingredients

  • 1/2 cup fresh blueberries
  • 2 tablespoons water
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1 tablespoon minced shallot
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon finely chopped basil
