Citrus & Cilantro Grilled Chicken

Spring is getting closer and it’s about time to start grilling out! Hopefully this recipe will provide you with a hearty, yet healthy dinner to enjoy outside when the cold weather finally decides to break!


1. In a large bowl, combine garlic, cilantro, coconut oil, and the juices from the blood orange, lemon, and lime.

2. Marinate the chicken for at least 24 hours in refrigerator.

3. Allow the chicken to come to room temperature before cooking. Gently flatted the chicken breasts so they are of even thickness.

4. Grill until cooked through. You’ll be able to tell it’s done when the juices run clear and the meat is no longer pink.


  • Juice of 1 lemon
  • Juice of 1 lime
  • Juice of 1 blood orange
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 2 boneless chicken breasts
  • 2 tablespoons coconut oil
