Favorite Summertime Treats!

As we are well into the “Dogged Days of Summer”, I wanted to share a family recipe or two with all of you. Now that fresh fruits such as pears, apples, figs, and peaches are coming into season; I thought about a couple of recipes that were summertime staples in my house when I was growing up! I hope you all enjoy them. Keep in mind with both of these recipes; you can easily change the fruits out for other family favorites! The best part is that they are both simple, easy and minimally time consuming, so you can spend more time outside enjoying the beach!


 Apple and Peach Crisp


  • 2 cups peeled, sliced sweet peaches 
  • 2 cups peeled, sliced green apples 
  • 1 1/3 cups packed dark brown sugar
  • 1 cup all-purpose flour
  • 1 cup non-instant oatmeal
  • 1/2 teaspoon cinnamon
  • 1 cup butter, softened


  1. Place apples in 1 1/2 quart glass baking dish.
  2. Mix brown sugar, flour, oatmeal, cinnamon and butter in bowl with a fork until crumbly.
  3. Spoon or sprinkle mixture evenly over sliced apples. 
  4. Bake in top part of oven at 350 degrees for about 25 minutes or until done.

Vanilla Ice Cream


  • 2 quarts half-and-half cream
  • 1/2 pint heavy cream
  • 1 1/2 cups white sugar
  • 4 teaspoons vanilla extract
  • 1 pinch salt
  • 1/4 cup of Carnation Coffee-Mate French Vanilla creamer


  1. Combine half-and-half, cream, sugar, vanilla, coffee-mate French vanilla creamer and salt in freezer container of ice cream maker. Freeze according to manufacturer’s instructions.
