Green Bean Salad

I thought everyone would enjoy a cold green bean salad to help beat the summertime heat!

Steam green beans in 1/2 inch boiling water covered for 3 or 4 minutes. Cold shock beans by running under cold water and drain well. Place beans in a bowl and combine with onions, cucumber, garlic and tomato. Dress salad with a generous drizzle of extra-virgin olive oil, balsamic vinegar and the juice of 1/2 lemon. Season salad with coarse salt, pepper, and oregano to taste.


  • 1 pound fresh green beans, washed and trimmed
  • 1/4 red onion, sliced thin
  • 2 cloves of crushed garlic
  • 1/4 cucumber, cut into thin strips
  • 1/2 pint sungold cherry tomatoes, halved
  • Extra-virgin olive oil, for drizzling
  • Balsamic Vinegar, for drizzling
  • 1/2 lemon, juiced
  • Fresh or dried oregano
  • Coarse salt and pepper, to taste
