Roasted Jalapeno Lime Kale

If you love kale and are tired of it in soups, raw or sauteed. This is a quick and simple recipe to mix things up for dinner!

Directions:

Heat oven to 375°.

Toss dry kale leaves in Jalapeno Lime olive oil and spread in a single layer on a large sheet pan. Lightly  season with fresh ground black pepper and sea salt.

Roast 10 to 12 minutes, or until crisp, turning over halfway through. Remove from oven and sprinkle with salt and more pepper, to taste.

Ingredients

  • 2-3 bunches of The Veggie Wagon’s organic kale, rinsed and thoroughly and destemmed(make sure to let kale dry prior to tossing in olive oil)
  • 3/4 cup The Veggie Wagon’s Jalapeno Lime olive oil
  • Fresh ground black pepper and coarse sea salt to taste
