Sweet Potato Salad

1.  In a large bowl, combine potatoes, cucumber, red pepper, and onion.  In a small bowl, blend mayonnaise/vegenaise, salt, pepper, and hot pepper sauce.  Pour over potato mixture and toss to coat.

2.  Cover and refrigerate for at least 1 hour.

Ingredients

  • 3 pounds sweet potato, cooked, peeled, and cubed
  • 1 cup chopped sweet red pepper
  • 1/2 cup chopped red onion
  • 1 1/4 cups mayonnaise/vegenaise
  • 1 diced cucumber
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon hot pepper sauce (optional)
