Veggie Wagon’s Homemade Fresh Pasta

October 17th is National Pasta Day and The Veggie Wagon, located in Carolina Beach, NC, makes their own pasta from scratch. We make our own homemade lasagna from the pasta, homemade sauce, filling and even the cheese and we also make lots of flavors of ravioli. like our homemade lasagna, our ravioli are all tediously handmade from the dough, filling, cheeses and cut. They are quite delicious and do not need anything heavier than a simple, light and fresh sauce.


Heat olive oil in a deep sautee pan. I prefer a metal bottom pan with a tight fitting lid. Add chopped garlic and stir every minute or so until lightly brown, but not burnt. Add freshly chopped Veggie Wagon tomatoes( romas or slicers work just fine). Lastly add 3/4 of your chopped basil and season with sea salt and fresh ground pepper to taste. Gently stir, so you don’t crush the tomatoes. Turn it down to low and let it simmer until hot. You may also add a bit of red wine if you like, but it is not necessary. Once your sauce is done and your pasta is done, plate your ravioli, top lightly with your sauce and sprinkle left over basil on top lightly.


  • 3-4 lbs of fresh VW tomatoes
  • 3-4 cloves of fresh garlic, chopped or crushed
  • 3-4 cloves of fresh garlic, chopped or crushed
  • 10-12 leaves of fresh basil, chopped.
  • olive oil- enough to sautee garlic(1-2 tbsp)
  • Sea Salt and Fresh Pepper to taste
