Zucchini and Yellow Squash Gratin is the Perfect Healthy and Hearty Side for Your Fall Dinners!

It’s that time of year where the air starts to get colder and hearty, filling, delicious recipes are all the rage. And while we agree, we also know that sometimes you could use a little vegetable in your decadent dishes. That’s where this scrumptious yellow squash and zucchini gratin comes in! Just like a classic potatoes au gratin, this recipe is still hearty and warm– but it’s just as good for you as it is delicious!


  • 2 tablespoons butter
  • 2 medium zucchini, cut into 1/4-inch slices
  • 2 medium yellow squash, cut into 1/4-inch slices
  • 1 small white onion, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon coarsely ground pepper
  • 4 garlic cloves, minced
  • 1/2 cup heavy whipping cream
  • 1 cup panko bread crumbs (optional)
  • 1/2 cup grated Parmesan cheese, divided

    1. Preheat oven to 450°.
    2. In a large skillet, melt butter over medium heat; add zucchini, yellow squash and shallots. Sprinkle with salt and pepper. Cook, stirring occasionally, until zucchini and squash are crisp-tender, 4-6 minutes. Add garlic; cook 1 minute more.
    3. Add cream; cook until thickened, 3-5 minutes.
    4. Remove from heat; stir in 1/2 cup bread crumbs (optional, for thickness) and 1/4 cup cheese.
    5. Spoon mixture into a greased 11×7-in. or 2-qt. baking dish. Sprinkle with remaining bread crumbs and cheese.
    6. Bake until golden brown, 8-10 minutes.
