The Veggie Wagon is excited to announce that it is having a Mother Earth Brewing Tasting on Thursday, June 13, from 5-7pm. We are hosting some folk from the brewery. Mother Earth Brewing is based out of Kinston, NC and offers a wide selection of NC Microbrews. One of the best things about them, other than their delicious beers, is that their tap room is 100% solar powered. They offer a Kolsch style beer, Belgian Wit, Munich Dunkel, India Pale Ale and even 2 beach cans- a pale ale and a German Style Hefeweizen! There beers are absolutely amazing and are staples here at The Veggie Wagon, in Carolina Beach. Mark your calendars and stop in and meet the crew from Mother Earth Brewing on, June 13th.

Last night we made one of our favorite meals and thought we’d share it with you. We cooked fresh mussels, with oive oil, Vidalia onions, cilantro, tomatoes, organic elephant garlic, a bottle of chardonnay and had a freshly baked Rosemary Olive Oil loaf for dipping!

Ingredients:

3-4 tablespoons extra virgin olive oil-just enough to sautee the garlic and onions

2 bags mussels-cleaned and de-bearded

5-6 small to medium Burgaw tomatoes, diced

1 large handful of string beans, whole (optional)

1 large handful of cilantro, diced

1 medium Vidalia onion, diced

1 bottle of Chimango Chardonnay

4-5 cloves organic elephant garlic(remember elephant garlic is milder than regular dried garlic), chopped coarsely

Directions:

Heat olive oil in large, deep pan. Sautee onion and garlic until lightly browned. Pour in some Chardonnay, to prevent your onions and garlic from burning. Toss in string beans and mussels, cover for about 2 minutes. Next add your cilantro and tomatoes-stirring occasionally. Your mussels are done when they are opened and slightly pink in color. Remove from heat, place in a large bowl and enjoy! Slice some fresh baked Rosemary Olive Oil Bread and enjoy!

It has been around for a long time, but was the forgotten vegetable for some time. Well it is back and it is super versatile to make! It is delicious raw, sautéed, and in chip format! Chips you ask- yes kale chips. The Veggie Wagon has been working on their own line of Kale Chips. We have made created our own recipe for a Southern Favorite-Salt and Vinegar Kale Chips. These kale chips are tangy, salty and crispy. They are a much healthier alternative to potato chips and a different twist on ordinary kale. If you stumble upon us in Carolina Beach(Pleasure Island), stop by our market. We are located on Pleasure Island, just South of The Lake in Carolina Beach. Our hours are from 9am-8pm daily.

The Veggie Wagon has always carried Organic Kale that is grown in Pender County, NC . Many people are quickly realizing the versatitility and health benefits of kale. Kale chips are a nutritious, crunchy snack and can range in diversity of flavors. We have started tinkering around in our kitchen, in Carolina Beach, and have made our very first batch of Kale Chips, using our Organic Green Kale. Our Salt and Vinegar Kale Chips are the perfect fix for the days that you crave something salty and crunchy. Afterall, we in the south have a strange addiction to vinegar- so we figured that Salt and Vinegar Kale Chips would be the perfect snack! Stop by our market and grab a bag, when you find yourself enjoying a day at the beach on Pleasure Island.
