Baked Zucchini Grinders

  1. Preheat the oven to 350 degrees F.
  2. Heat olive oil in a skillet over medium heat. Saute the zucchini, mushrooms and onions in olive oil until browned and slightly tender. Season with red pepper flakes, salt and pepper, and stir in the marinara sauce. Cook and stir until sauce is heated.
  3. Sprinkle some of your cheese on the bottoms of your rolls to prevent the buns from getting soggy from the marinara sauce, while in the oven.
  4. Spoon a generous amount of the zucchini mixture into each sandwich roll. Top with a handful of shredded mozzarella or provolone. Close the rolls, and wrap individually in aluminum foil.
  5. Bake for 15 minutes in the preheated oven, until bread is heated through, and cheese is melted.


  • 2 tablespoon olive oil
  • 2 medium zucchini, thinly chopped
  • 2-3 mushrooms of you liking, chopped thinly
  • ½ of a white onion thinly sliced
  • 1 pinch red pepper flakes
  • salt and pepper to taste
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese or provolone cheese
  • 4 Sweet and Savory Kaiser Rolls
