Brian’s Italian Zucchinis

  1. Rinse zucchini and slice lengthwise down the middle into two equal halves. Then scoop out the insides of each half and save in a mixing bowl.  Next drain away any excess    liquid from the bowl of zucchini. Mash up the zucchini until you reach a relatively smooth consistency
  2. Mix in all other ingredients, stir until everything is evenly distributed. Then spoon the mixture evenly back into the empty zucchini shells. Once all the shells have been filled, arrange them in a baking dish. Lastly, sprinkle some extra Parmesan cheese over the top of each zucchini.
  3. Bake at 375 for 20 to 25 minutes or until golden brown.


  • 1/2 cup of bread crumbs
  • 1/4 cup of white onion diced
  • 3 or 4 grilled and chopped sausages (optional)
  • 1/2 tsp of coriander
  • 1 tsp of white pepper
  • a few pinches of sea salt
  • 1/2 cup of shredded Parmesan cheese
  • 5 or 6 large organic zucchini
  • 1 tbsp fresh chopped dill
