Creamy Radish and Kale Dip

Kale. This leaf is great but how many ways can you really cook it. We came up with this idea and tried it in our kitchen, it came out very good but if you have any ideas on how to make it better we would love to hear them.

  1. Wash all the vegetables
  2. Take kale leaves and cut out the stems, finely chop the leaves, put in a bowl
  3. Take radishes and grate on a cheese grater, use the medium side of the grater, put in bowl with Kale
  4. Peel and chop onion, add to veggie mixture
  5. Warm oil in pan over medium heat
  6. Add kale, onion and radish mixture
  7. Cook until onions are clear, stir constantly to prevent the greens from burning, about 5 minutes
  8. Turn heat to low and add cream cheese
  9. Stir in cream cheese and stir until veg mix is completely incorporated
  10. Add salt, pepper, and crushed reds
  11. Take off stove, stir in 1/2 cup of Parmesan cheese
  12. Transfer to oven safe dish and top with additional Parmesan
  13. Bake uncovered at 350 until cheese is melted


  • 10 Kale Leaves
  • 6 Radishes
  • Two 1 lb packages of cream cheese
  • 1 Tablespoon Olive Oil
  • 1 Medium Onion
  • 1/2 cup Parmesan, plus additional to top dish
  • 1 Tablespoon crushed red pepper
  • Salt and black pepper to taste
