Mama J’s Honey Cake

  1. First beat eggs sugar and oil together. Then mix coffee/tea into honey. Next mix dry ingredients and add to egg-oil mixture. Alternating with coffee/tea and honey mix.  Lastly, add nuts, raisins and grated apples.
  2. Preheat oven to 350 degrees and bake for 1 hour in a well greased tube pan.

  • 3c. flour
  • 1tsp. baking soda
  • 1tsp. baking powder
  • ½ tsp salt
  • ½ tsp. cinnamon
  • ¼ tsp. ginger
  • 1c. strong coffee or tea
  • 1c. pecans, chopped
  • 1c. local honey
  • ½ c. oil
  • 1c. sugar
  • 3 eggs, beaten
  • 1 peeled, grated apple
  • 1c. raisins
