Mozzarella and Fresh Strawberry Salad

You would not think it,  but balsamic vinegar and strawberries go very well together. Add some fresh mozzarella and you have a great appetizer. A simple balsamic vinegar reduction throws this dish over the top.  The reduction allows the vinegar to really stick to the cheese and berries.

  1. In a large sauce pan bring 1/2 of balsamic vinegar to a rolling boil
  2. Reduce  to low and cook until it thickens, about 20 minutes, take off and sit to the side to cool
  3. Cut the fresh mozzarella in chunks or in slices
  4. Slice the strawberries in chunks or slices, cut same style as cheese
  5. Arrange cheese and berries on plate or put chunks in a bowl and lightly drizzle cooled balsamic reduction over the salad
  6. Can be garnished with fresh mint if desired
  7. Grab some good bread and enjoy

  • 1/2 cup Balsamic Vinegar
  • 1 Ball Fresh Mozzarella
  • 1 lb Fresh Strawberries, washed and cut
  • 2 sprigs fresh mint (optional)
  • Some good bread
