North Carolina Reuben Sandwich

Here is a good switch for the standard old sliced deli meat Reuben Sandwich. You can use Thousand Island Dressing, but replacing the dressing with little extra BBQ sauce makes it 10 times better.

  1. This easy recipe starts by warm your bbq in a small pot over medium heat until warm, make sure you stir frequently. If you have a bbq that is not sauced add, bbq sauce to prevent the meat from burning.
  2. Warm a large skillet over medium heat
  3. Take 2 slices of bread, and butter on one side if desired, and place butter side down on the warm pan
  4. Stack on 1 slice of cheese, pork, dressing or bbq sauce, coleslaw and/or Angela’s Pickeled Collards
  5. Place the the other slice of bread butter side up on the two sandwiches
  6. Cook in the pan for 4-8 minutes until golden brown, then flip and cook for an additional 4-8 minutes
  7. Repeat above with other 4 pieces of bread and enjoy
