Sweet Oven Roasted Cherry Tomatoes

I do not know about anybody else, but I love cherry tomatoes. Sadly after the whole season of eating them like candy I start to look for new ways to use them. We tried this out the other night and it is so simple and came out amazing. This was too good not to share.  We love garlic so feel free to tone it down some if you are not a fan. You can also use any herb blend here we just decided to use fresh basil as we have a ton of it right now. We ate these gems on everything from crackers to sandwiches, and even topped eggplant parm with them, they are also incredible by themselves. They are great to keep in the fridge and eat a few as a snack. Hope you enjoy these as much as we did.

  1. Pre-heat the oven to 300. Wash your basil and cherry tomatoes. Take 1/3 cup of olive oil and toss the cherry tomatoes in the oil and place in a oven safe dish
  2. Once the oven is heated place the dish of tomatoes in the middle and bake for 45-60 minutes until the tomatoes are soft.
  3. In another bowl while the tomatoes are baking, crush the garlic in a garlic press, or you can finely chop it, chop the basil and add it to the bowl and add the remaining 1/3 cup of olive oil and salt and pepper to taste.
  4. After the tomatoes have baked, mix the garlic, herb, and oil mixture. Carefully remove the dish from the oven and put the oven on broil. Top the tomatoes evenly with the garlic mixture and put back in the oven with the door cracked.
  5. If all goes right after a few minutes the cherry tomatoes should start gently popping under the broiler. This is good. You want to keep a close watch on them and remove them from the oven with the garlic you put on top starts to lightly brown and the tomatoes start to blister and brown. If you leave them too long the garlic will  turn dark and burn, these will make them taste bitter. Remove them from the oven let stand for 10-15 minutes and enjoy.

Ingredients

  • 2/3 cup olive oil
  • fresh ground pepper and sea salt
  • 1/2 cup of basil (or any other herb blend you like)
  • 5-8 large cloves of garlic
  • 2-3 pints fresh cherry tomatoes.
