Preheat the oven to 275 degrees F. Cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food, or great on sandwiches.

Preheat oven to 475 degrees Fahrenheit. In a large bowl, combine the squash, banana peppers, sweet potato, and Yukon Gold potatoes. Mama J’s Honey Cake

Beat eggs sugar and oil. Mix coffee/tea into honey. Mix dry ingredients and add to egg-oil mixture. Alternating with coffee/tea and honey mix. Add nuts and raisins and grated apple. Bake 1 hour at 350 degrees in a well greased tube pan.
